  • Aerolite Lyndsay 10YO – Scotland

    46% || The Character of Islay Whisky Company

    From The Character of Islay Whisky Company comes a mysterious Islay single malt that goes by the name Aerolite Lyndsay. The peaty whisky has been sourced from an undisclosed distillery on the island, though we have been told that the liquid was aged for 10 years in a mixture of bourbon barrels and Spanish oak sherry quarter casks, which sounds thoroughly delicious. It’s bottled without any additional colouring, or any of that chill-filtration, too.

    Nose: Lots of maritime peat, with notes of iodine intertwined with honey sweetness, paprika, salted caramel and old bookshelves.
    Palate: Smoke returns alongside mint dark chocolate, espresso and new leather, with honey and soy sauce mixed together.
    Finish: Boiled mint sweeties, liquorice allsorts, bonfire smoke and toffee penny, with a pinch of salt.

  • Alvor

    Kinn Bryggeri

    – Wild beer with Brettanomyces 6,5%

    Freshly bottled, Alvor (Serious) is a lively, top-fermented, classic Belgian Trappist. But as the wild yeast propagates, other notes come increasingly into prominence. Allow the bottles to mature in the basement for a year or so, and you will understand what we mean. Have a bottle on hand as you “get serious” with Norwegian fermented “rakfisk”, cured leg of mutton, or goats-milk chèvre.

    Malt: Pilsner, Munich, Crystal and Black malt

    Hops: Magnum, Mittelfrüh, Fuggles and Bobek

    Yeast: Fermentis T-58 + Brettanomyces Bruxellensis

  • Aurora NAS Sherry Barrel – Scotland

    46% || Wolfburn Distillery

    A late 2016 release from the Wolfburn distillery, matured in a combination of casks – 40% of this whisky was aged in second-fill quarter casks, 40% in first-fill ex-bourbon barrels and 20% in first-fill Oloroso Sherry hogsheads. An exciting release from the distillery.

    Nose: Almonds and pecans, with a wave of sweet, sticky Sherry notes.

    Palate: Raisins, currants, more mixed nuts and fresh barley.

    Finish: Lingering Sherried spice on the finish.

  • Bathtub Gin

    43,3% || Ableforth’s

    First, copper pot-distilled gin is made with juniper, coriander and other fragrant botanicals, but we don’t stop there. Instead, we take a portion of this gin and painstakingly infuse it with a further six fresh botanicals – a process which takes a whole week to do.

    This infusion process allows those fresh botanical flavours – too delicate to survive traditional distillation – to shine through, and Bathtub Gin is left with its unique flavour and distinctive hue.

    Nose: Fresh and bold juniper leads the way with fragrant citrus and cardamom. Notes of fresh orange peel and cinnamon add to an enticing nose.

    Taste: Juniper again leads, but there’s plenty more besides. The mouthfeel is thick and creamy whilst the cloves, coriander and cardamom offer depth.

    Finish: Here the supporting botanicals really shine with lingering cardamom and orange peel on the tail.

  • Big Dipper Gin

    46% || That Boutique-y Gin Company

    Fairgrounds are such odd places as they’re both child-like and nostalgic but also slightly seedy and decrepit. The smell of fairgrounds carries these contradictions – sugar with machinery and dirt. All captured in this gin’s aromas.

    Label
    The view from a happy muncher feasting on popcorn, toffee-apple and candyfloss. Gathering speed on the roller coaster, we can see some familiar faces having a great time as the sun sets over the fair.

    Tasting Notes
    Nose: Herbaceous, grassy, oily smoke and cardamom

    Palate: Smooth, oily mouthfeel, citrus, cocoa and sweetness

    Finish: Sweet toffee, buttery popcorn, smokey, grassy and cardamon

  • Black Pepper Bitters

    40% || Bitter Bastards

    Bitters are said to be the seasoning of the cocktail world, so naturally there has to be Bitter Bastards Black Pepper Bitters (just don’t go looking for salt bitters to go on your fish and chips!).

    Rapidly macerated, centrifugally extracted and packing a cracking punch of peppery heat, these Bitter Bastards ought to make for some exciting creations at the bar.

  • Bøvelen

    Kinn Bryggeri

    – Belgian triple 9,0%

    Named after the Devil, as the label drawing indicates, Bøvelen is a Tripel that demands respect. Once we saw how the Belgian Trappist monks brew their strong beers, we just knew we had to continue the tradition in Kinn Brewery. Despite the high alcohol content, Bøvelen is a refreshing beer. Like a true Belgian Tripel the colour is golden, the notes well-balanced in the Belgian style, with sprightly hoppiness and a tiny hint of sweetness in the finish. The alcohol, by contrast, is well concealed. This Devil’s Brew is a feisty companion to cheese, rich fish dishes and as an aperitif.

    Malt: Pilsner malt and sugar

    Hops: East Kent Goldings and Hallertau Mittelfrüh

    Yeast: Wyeast 3787 Trappist High Gravity

  • Brottsjø

    Brottsjø – Kinn Bryggeri

    – Double IPA 8,5%

    Kinn Brottsjø – the aptly named “crashing wave” – is our double IPA containing no less than 8.5 % alcohol. Brewmasters strive to strike the right balance between maltiness and hoppiness in extra strong beers, so we rely on Belgian Trappist monks for the yeast and a generous helping of sugar to bring out the ideal blend of malty sweetness and alcohol. The hoppy punch derives from American Zeus, Citra, and Mosaic, with just a touch of Japanese Sorachi Ace. The resultant brew is fruity and spicy all at once. With such a powerful taste, this beer is best enjoyed by itself. Or you can combine with a platter of strong cheeses.

    Malt: Pilsner and Pale Ale malt

    Hops: Zeus, Sorachi Ace, Citra, and Mosaic

    Yeast: Wyeast 3787 Trappist High Gravity

  • Casa Santana 12YO – Colombia

    58,4% || That Boutique-y Rum Company

    The first bottling of Casa Santana rum from Colombia from That Boutique-y Rum Company, and it’s a fascinating expression which was matured for 12 years before bottling. Very satisfying stuff, with some unexpected flavours coming through. The label is just as curious, featuring some sort of sorceress winning at pontoon while ominously holding a fireball in her hand. Well, you wouldn’t try you hardest to win when faced with the constant threat of a fireball, would you? (Even if you’ve got one of those cool visor hats!) Oh, and there’s a massive Andean Condor, the national bird of Colombia, also losing the game and wearing a snazzy hat.

    Batch 1 is a release of 3,766 bottles.

    Nose: Toffee oak, soft vanilla and brown sugar lead among touches of salinity, sweet red chilli heat and hot tyres. Gingerbread adds a little aromatic spice among plenty of grilled tropical fruit and raw honey before ground black pepper and vegetal, almost Mezcal-esque notes develop way below.

    Palate: Through melting butter, creamy banana pie, a little salted caramel and plenty more heaps of exotic fruit comes rich baking spice, wasabi and just a touch of oak char.

    Finish: A long and confident finish. Thick caramel, dry nutmeg spice and some engine oil.

    Overall: All kinds of brilliant and bizarre, it’s a Captain Beefheart of a rum.

  • Celery Bitters

    40% || Bitter Bastards

    Savoury cocktails are very much a ‘thing’, and the folks behind Bitter Bastards have got a great tool for anyone looking to make some – centrifugally extracted, rapidly macerated Celery Bitters! Particularly terrific in Bloody Mary cocktails, and great for use in all sorts of gin-based beverages that could use a hint of vegetal, savoury deliciousness.

  • Cherry Brandy

    27,8% || Ableforth’s

    As mad as it sounds, many cherry brandies don’t contain actual cherries, or actual brandy. But ours has both – and the best of both too. We take high-quality fresh extracts of sweet and sour cherry varieties to give optimal sour cherry flavour and balance them perfectly with rich, sweet Cognac. XO and VSOP Cognac to be precise. Yep, the fancy stuff.

    Tasting Notes:

    Nose: Intense swirls of bright, shiny cherries with big notes of almonds, cinnamon and a blossoming, floral depth.

    Taste: Rich, thick and syrupy. The luscious cherry is joined by dashes of damson, plum and hints of allspice.

    Finish: As the cherries recede, deep nutmeg notes appear.

    Cherry Brandy tastes great with premium cola and an orange wedge.

  • Cherry Gin

    46% || That Boutique-y Gin company

    Fruit gins were once all the rage: lemon gin, orange gin, even asparagus gin once graced the shelves of liquor stores the world over. Now, they’re back with The Boutique-y Gin Company Cherry Gin. We’ve taken a Classic Gin and added a combination of sweet and sour marasca cherries, as well as a good pinch of spice. A fun and fruity gin, this is delicious as a sipper, but eminently mixable, too; try it with a splash of cola and a wedge of lime for a taste sensation.

    Nose: Plump and juicy – homemade cherry pie with a generous scoop of vanilla ice-cream.
    Taste: The succulent fruity sweetness of cherry, a touch of spice, and a slight citrus tang.
    Finish: The lingering tartness of sour cherries, accompanied by the juniper berry, which makes an encore appearance.

  • Chili Chocolate Rumbullion!

    42,6% || Ableforth’s

    Rumbullion! is an extraordinary cockle-warming spiced rum, but those clever Ableforth’s folks have changed the game with this limited edition Chilli & Chocolate expression! Criollo cocoa nibs, chipotle chillies and jalapeño chillies join the original Rumbullion! medley of Caribbean rum, Madagascan vanilla, orange peel, cassia, clove and cardamom, resulting in an indulgent and spicy flavour profile. Excellent served over ice, and it makes some marvellous cocktails too. Also, we reckon it’ll be stunning as a winter warmer splashed in a hot chocolate…

    Nose: Intense bittersweet dark chocolate leads with coffee beans, nutmeg, red cola cubes and orange zest in support. Earthy red chilli warmth emerges underneath and is balanced by creamy vanilla.

    Palate: Black Forest gateau, drying cocoa and more thick slabs of dark chocolate are at the core, with gingerbread, cherry cola and hints of aniseed and clove in the back-drop.

    Finish: Nutmeg, drying chilli heat and even more chocolate.

  • Chipotle Bitters

  • Cobnut Ghost Gin – Greensand Ridge Distillery

    46% || That Boutique-y Gin Company

    This gin is a bit of a mash-up of Greensand Ridge Distillery’s London Dry Gin and their Raspberry Ghost. The gin has a selection of locally-sourced ingredients, such as cobnut (squirrels are nuts for them), rosehip, honey, and hawthorne berries. The raspberry ghost is more fruity than spooky: it is a mix of raspberry juice and wheat spirit that is then distilled.

    This edition has a re-jigged botanical mix – less spice and less cobnut (leaving more for the critters), but has a fruity twist in the addition of surplus raspberry juice and quince to the still.

    Tasting notes:
    Nose: Boom! There’s raspberry, bright and invigorating, followed by a leafy nuttiness.

    Taste: Bold flavours of fresh raspberries dusted with absinthe-soaked sugar.

    Finish: Cinnamon sugar, succulent fruits, and a dry, liquorice and menthol finish.

  • Cocoa Bitters

    40% || Bitter Bastards

    If you’re looking for some bitters to make your drink taste like you just filled up an Easter egg with mashed up chocolate buttons, this probably isn’t for you. However, if you’re looking to add a rich depth of flavour to a cocktail (something with rum in it, we recommend), say hello to your new best friend, the Bitter Bastards Cocoa Bitters.

    These bitters are made using innovative rapid-maceration and centrifugal extraction techniques, and only a handful of ingredients – cocoa, specially selected spirit and bittering agents (gentian root). It’s top stuff, indeed.

  • Coffee Bitters

    40% || Bitter Bastards

    A 10cl bottle of Bitter Bastards Coffee Bitters, made with roasted arabica coffee beans alongside specially selected spirit, utilising rapid-maceration and centrifugal extraction to achieve a full-bodied flavour profile and attractive clarity. Add a few drops to our cocktails to give them a burst of enjoyably bitter freshly roasted coffee yumminess.

  • Cotswolds 3YO – England

    50,4% || That Boutique-y Whisky Company

    A fine sip from Cotswolds Distillery, they’ve been producing outstanding natural spirits since 2014. This is a balanced whisky carrying a real depth of flavour from time spent in the finest oak casks and was made using locally sourced and hand turned Cotswolds barley. Have you ever been to this lovely part of the world? It’s ever so quaint, as depicted on our label artwork. You’ll always receive a friendly welcome whenever you visit and… hang on, what’s that poking out from underneath the bushes? You’ll do well to remember that every village has its secrets.

    The Experience
    Nose: Sweet and rich on the nose – there’s caramelised almonds, sweet pineapple, cherries, a hint of vanilla too.

    Taste: The sweetness continues, but citrus-y warmth interjects – there’s lemon, orange and grapefruit.

    Finish: Quite a leafy,, fresh finish with green grapes, freshly cut grass and a dash of lemon.

  • Dampen

    Kinn Bryggeri

    – American Steam Beer 4,5%

    Our very own Dampen – meaning Steamboat – is reminiscent of the classic Anchor Steam Beer from San Francisco. Following the original lines, Dampen is brewed with lager yeasts at high temperatures. The result is moderate fruitiness from the yeasting process, and a fine malty presence. Dampen evinces a delicate balance of hoppiness and malt, with the hops slightly in the ascendance. German Northern Brewer hops are preferred, tempered with a little American Cascade towards the end of the boil. The resulting brew has a pure, bitter note, combined with a slightly spicy aroma reminiscent of wood, citrus, mint, and blackcurrant. The malt blend includes Pilsner and caramel varieties. Our current Dampen, created for the Fjordsteam Fjordboat Festival in Florø in 2010, quickly became a regular favourite. It is fitting therefore that the label depicts a famous local steamer, DS Atløy. Dampen is an all-purpose table beer that complements a variety of menus, coping especially well with rich or spicy dishes.

    Malt: Pilsner malt and caramel malt

    Hops: Hallertau Northern Brewer and Cascade

    Yeast: Wyeast 2278 Czech Pilsner

  • Dead King Gin

    46% || That Boutique-y Gin Company

    In the 19th century how did the intelligentsia get their kicks? By getting hold of an Egyptian mummy and coming together to watch as it was unwrapped by an Egyptologist. This gin takes the aromatics used in an embalming, and which you might find in, on or around a dead pharaoh.

    Label
    Bejewelled, golden and etched with Hieroglyphics, the lid of the Sarcophagus is slightly ajar. Filled with juniper berries, honey, myrrh, moss and other fragrant botanicals.

    Tasting Notes
    Nose: Initially sulphuric, herbaceous scents, rosemary and spice.

    Palate: Honey sweet, herbs, spice and everything nice.

  • Diamond Distillery 11YO Port Mourant

    56,4% || That Boutique-y Rum Company

    Another excellent That Boutique-y Rum Company bottling from the Diamond Distillery – this time produced using the distillery’s wooden Port Mourant Still and matured for 11 years. The Port Mourant clearly has a bit of wanderlust, beginning its life at the Port Mourant Distillery before moving to the Uitvlugt Distillery then moving on to the Diamond Distillery!

    Batch 2 is a release of 710 bottles.

    Nose: Freshly-laid asphalt, oak char and red chilli heat initially, then brown sugar, a hint of creamy vanilla and plenty of pickle-brine salinity. There’s an underlying meatiness to the nose, which is complemented by sweeter notes of roasted fruit, cinnamon and toffee.

    Palate: Rich molasses spice, caramel and heaps of banana pancakes, with hints of earthy smoke, chilli jam and sea salt throughout.

    Finish: A long, muscular finish balances spice and sweet notes well.

  • Distillery 291 Rye 11 Months – USA

    49,9% || That Boutique-y Whisky Company

    An independently bottled 11-month-old rye made by Colorado’s Distillery 291 and bottled by That Boutique-y Rye Company. Distillery 291’s spirits benefit from the uniquely Coloradan proprietary process the brand employs, called the El Paso County Process, which takes the stillage of IPA beer and adds it to the mash. The whisky may be bold and innovative, but the label is more demure and ominous (save for that charming little Aspen tree on the left). Accompanying the 1920’s theme are gallery owner Alfred Stieglitz, American artist Man Ray and the looming spectre of Michael Myers – and we don’t mean the funny one.

    Batch 1 is a release of 496 bottles.

    ‘That Boutique-y Whisky Company’ bottles single malts, single grains and bourbons from a variety of renowned distilleries as well as producing award-winning blended malts and blends. These whiskies are adorned with cultish graphic novel-style labels.

    Nose: Maple syrup, vanilla custard and salted popcorn combine with dried fruits, orange peel and fiery flickers of cinnamon and clove spice.

    Palate: There’s sweet liquorice, dried apricots and spiced apple chutney among fresh vanilla pod, drying winter spice and more maple syrup on pancakes.

    Finish: Through a lingering rye spice note, there’s sponge cake and honey.

    Overall: Top quality stuff from Distillery 291.

  • Enmore 27YO – Guyana

    51,2% || That Boutique-y Rum Company

    A 27 year old Guyanese rum from the long-closed Enmore distillery, independently bottled by That Boutique-y Rum Company. It was produced using the Versailles single wooden pot still during its brief stay at Enmore – this still would later find a home at the Diamond distillery. Brilliant stuff.

    Batch 1 is a release of 413 bottles.

    Nose: Loads of ripe banana and spicy vanilla, built on a robust oaky core. There’s a linseed richness and a herbal green quality, backed with cocoa notes. Perhaps savoury plantain, too.

    Palate: Marzipan-led, with oodles of cooked pineapple, milk chocolate and papaya notes. The banana is in cake form now, and the toasty oak continues to add a richness.

    Finish: Rich and well-defined, with that almond-pineapple duality continuing.

    Overall: Bold, super-tropical and a load of fun!

  • Gamleguten

    Kinn Bryggeri

    – Pale stout 7,0%

    Stout, a word that does double duty in England and Norway, originally denoted a strong beer. Either the darker, Porter Stout, or the lighter, Pale Stout. Stouts used to be generally stronger than the regular, everyday ale. Nowadays the term tends to mean a dark, top-fermented brew. Here at Kinn we take our history seriously, so we brew our Gamleguten “Old Boy” Pale Stout like a brown ale, with a taste that is darker than the pale hue would suggest. As a strong, relatively pale ale, it is a proud representative of the Pale Stout family. Gamleguten has a complex, though balanced, malt flavour with hints of milk chocolate, nuts, caramel and a touch of coffee. To the mash we add Pale Ale malt, amber malt and caramel malt, with just the one hop variety from East Kent Goldings. As with all our Anglo style beers, our yeast partner is Wyeast 1318 London Ale III. Gamleguten won a bronze medal in Barcelona Beer Challenge in 2016.

    Malt: Pale Ale malt, caramel malt and amber malt

  • Globetrottar

    Kinn Bryggeri

    – IPA 4.5%

    Norway lacks the climate to grow our own hops, so we have to trawl the hop farms of the world to find our ideal shade of flavouring. Kinn’s Globetrotter has indeed been around the world, gathering hops from Europe, America and Oceania. Together the partnership results in an exquisite IPA that finely balances citric, tropical fruit, spicy and flower bouquets. But not too overpowering, subtlety is also a virtue!

    Malt: Pilsner, Munich, Cara Clair and Crystal malt

    Hops: Magnum, Galaxy, Citra, Simcoe, Cascade and Bobek

    Yeast: White Labs London Fog
